SHAHI TUKRAY , A royal dessert recipe made with fried bread coated with sugar syrup and soaked in a creamy thickened milk pudding (Rabri) and garnished with dry nuts.
This royal tasting delicacy is said to have its origins in the Mughal Empire. The Word “Shahi” means royal and “Tukra” means piece. This very rich royal piece of dessert is definitely a royal indulgence.
In Pakistan, this royal delicacy is referred to as SHAHI TUKRAY whereas across the border in India its commonly called DOUBLE KA MEETHA. Both recipes are essentially same with slight variations.

INGREDIENTS
- 10-12 Bread Slices
- 1 Litre Fresh Milk
- 6 Cardamoms (Elaichi)
- 1 Cup Condensed Milk
- 1 Cup Cream
- 1 Cup Water
- 1 Cup Sugar
- 2 Cup Cooking Oil
- Sliced Almonds and Pistachios
DIRECTIONS
PREPARE MILK PUDDING / RABRI
- Add 4 cardamoms to 1 litre fresh milk on high flame and whisk until foaming then add 1 cup condensed milk and mix well to combine.
- Add 1 cup cream and whisk to form a slightly thick pudding. Should take around 10 mins to get thick on high flame. Keep whisking to prevent sticking.
- Keep Aside to cool.
PREPARE SUGAR SYRUP
- Mix 1 cup water with 1 cup sugar and 2 cardamoms on high flame.
- Stir well to dissolve and keep the sugar syrup aside.
ASSEMBLING
- Fry Bread Slices in cooking oil until golden brown then dip them in the sugar syrup and line them up in tray.
- Fill the tray with the milk pudding / rabri, soaking the bread.
- Sprinkle sliced almonds and pistachios and serve.
