Confused on what to make for dessert which will be loved by everyone, Rasmalai is one of those recipes that never fails.
“Ras” means juice and “Malai” means cream in hindi/urdu. Rasmalai is a sweetened round balls of chenna/paneer(fresh cottage cheese) soaked in milk cream.
Though the recipe looks a bit difficult to prepare but you will be amazed to see how simple and easy it is to make if you follow the directions.
It’s worth the effort at the end when you get a taste of this soft, spongy, creamy treat that is sure to tantalize your taste buds.

INGREDIENTS
- 2 Eggs
- 4 Cardamoms
- 2 Litre Fresh Milk
- 2 Cups Milk Powder
- 1 TBSP All Purpose Flour (Maida)
- 1 TSP Baking Powder
- 1 TSP Semolina (Sooji)
- 2 TBSP Cooking Oil
- 1 and 1/2 Cup Condensed Milk
- 6-10 Sliced Almonds and Pistachios
DIRECTIONS
- Mix 2 cups milk powder with, 1 TBSP AP flour, 1 TBSP baking powder, 1 TSP semolina, 2 TBSP cooking oil and add 2 whisked eggs.
- Knead the mixture into a smooth dough.
- Take a TBSP size scoop of dough and roll it using palm of your hands into a smooth ball. Keep the dough balls aside.
- Heat 2 Liter fresh milk in a pot on medium flame, add 4-5 cardamoms and bring to boil.
- Add 1 and 1/2 cup condensed milk, 6-10 sliced almonds and pistachios each and give it a good mix.
- Add the dough balls, cover and cook for 15-20 mins.
- Dough balls will be soft now and doubled in size.
- Take off flame, let it cool. Sprinkle crushed almonds and pistachios.
